ANCHOVY PASTE USES
Anchovy Paste is made from anchovies ground into a paste and sold in tubes or jars. This is a popular European ingredient. Anchovies are small saltwater fish belonging to the herring family and native to the Mediterranean Sea and the English Channel. It is usually no more than half a foot in length and has a green color, but is almost black when cured. It is similar to a sardine and used in much the same way. Anchovies can be preserved in salt, pickled, or packed in oil and are very versatile in their uses as an appetizer, seasoning, or garnish.

Anchovies work well to flavor tomato sauces, fish sauces, salad dressings, vegetables, chicken, and lamb. A little goes a long way.
