Beer Batter Crispy Shrimp - Batter for fried shrimp, veggie or for cheese cubes.
Lite (light) and crisp plain beer batter and optional deep fried coconut shrimp recipe.
Tartar - Tartare or Tarter Sauce and Red Sauce Recipes included.

Ingredients
1-1/2 lbs medium or large cooked shrimp
1 can of beer. Let opened beer go flat for awhile or it will foam up when added to mixture.
1 cup flour
¼ cup cornstarch
Pinch garlic powder
3 eggs
1 teaspoon salt
1 teaspoon pepper
1 pinch dry mustard
1 teaspoon dark soy sauce (regular sodium)
½ teaspoon Worcestershire sauce
Pinch oregano
Oil for frying (Canola Oil works well)

Directions
Mix all together in a large bowl and whip ingredients so they are well blended (Can be stored in the refrigerator for 2 days if sealed in a jar or plastic container with a tight lid.)

De-vein shrimp if  needed and split partially down back then spread open (butterfly) and flatten slightly.

Dip shrimp, fish or whatever in batter and in a large deep,  heavy gage SAUCE PAN, heat about 3 inches oil over medium-high heat to 375 degrees and deep fry the battered pieces, a few at a time, 2 to 3 minutes or until a golden light brown. When cooked, drain them on paper towels.

*Optional: For Coconut Shrimp. Dip into batter mixture. Allow excess batter to drip off. Coat them with some orange marmalade mixed with a little honey then dredge them in flaked coconut before frying.


TARTAR SAUCE
Ingredients
2 hard cooked egg yokes  - Mix the two hard cooked eggs yolks until quite smooth and free from lumps.
Salt and pepper to taste,
1 cup of extra virgin olive oil
1 tablespoon chopped green garden onion tops
3 to 6 tablespoons white wine vinegar to taste
2 tablespoons mayonnaise

Directions
Gradually beat in 1 cup olive oil with 3 to 6 tablespoons vinegar. Add the very finely chopped green onion tops with the mayonnaise to the egg yolk mixture and beat until very smooth. This can be served hot or cold.

*Good for appetizer sauce. Excellent with scallops, fish, shrimp or cold cuts and cold chicken.

SHRIMP RED SAUCE DIP
Ingredients and Method
1/2 cup mild salsa sauce
2 tablespoons lemon Juice
1/4 cup Ketchup
Dash of hot sauce
1 teaspoon Worcestershire sauce
Pinch of salt
1/2 cup horseradish

Combine all ingredients and chill. Use as a dip with shrimp, or raw oysters.
