BREAD PUDDING with a RUM SAUCE RECIPE
and JACK DANIEL'S BREAD PUDDING

Ingredients
6 slices day-old bread
Soft butter to spread on bread
1/2 cup raisins
4 eggs, beaten
2 cups whole milk
3/4 cup white sugar
1/2 teaspoon nutmeg powder
1 teaspoon cinnamon, ground
1 teaspoon vanilla extract
6 tablespoons apricot or strawberry jam
Confectioners sugar

DIRECTIONS
Spray an 8-inch ovenproof dish. Spread the slices of bread with butter and cut diagonally into quarters. Arrange in the dish with the raisins between the slices.
In a medium mixing bowl, combine eggs, whole milk, sugar, nutmeg, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and let it stand for about 15-20 minutes. Place in a preheated oven on the second rack from bottom and bake at 325-F (175 degrees’ C) for one hour, or until a table knife inserted into pudding comes out clean.
Remove from the oven and allow to cool down a little. Gently heat the jam, thinning it with 2-3 tablespoons of water, strain and brush this glaze over the bread pudding. Dust with confectioners’ sugar.
Makes 4-5 servings.

Butter Rum Sauce Recipe
Ingredients
1 stick butter
3 tablespoon cream
1 box confectioners' sugar
Pinch of salt
1 tablespoon vanilla extract 
3 tablespoon Morgan's Spice light or dark Rum (contains 35 Percentage Alcohol which will cook away but leave flavor.)
* You can substitute Morgan's spiced rum with any drinking rum if you add 1/4 teaspoon Chinese five spice to it.

Method
Melt butter, stir in cream, salt and Morgan's spiced rum, slowly stir in confectioners' sugar and heat until bubbly. Remove from heat and stir in vanilla. Spoon or brush-dab top on each serving of Bread Pudding.


RECIPE # 2
JACK DANIEL'S BREAD PUDDING
Ingredients
1 cup cooking raisins
1 tablespoon grated fresh orange rind
1/3 cup Jack Daniel’s Tennessee Whiskey
10 slices lightly toasted white bread, cubed
4 eggs
1 cup sugar
3 cups milk
1 teaspoon vanilla
½ stick butter, cut into small sliced pads for spreading around
½ teaspoon Nutmeg

Method
Combine the raisins, orange rind, and Jack Daniel's in a small bowl. Let soak about 20 minutes. Butter a 9 x13 inch baking dish. Place bread cubes in the prepared dish. Whisk together the eggs and sugar in a large mixing bowl. Stir in the milk and vanilla. Sprinkle the raisin mixture evenly over the bread cubes. Pour the egg mixture over the bread pressing down on bread with a fork and let stand about 15 minutes. Meanwhile preheat oven to 375°F. Dot the top of the pudding with butter and sprinkle with nutmeg. Set in the center of oven and bake until golden brown, about 35 to 40 minutes. Serve warm. *Optional; Drizzle each serving with warmed strawberry preserve mixed with a little sugar and a little water to thin it.
