Double the recipe for 100 persons

1-1/2 lbs bacon
¾ cup flour
15 lbs potatoes, boiled cooked and diced
3 cups chopped onion
4 cups fine chopped green pepper
1-1/2 cups wine vinegar 
3 tablespoons sugar
6 cups water
2 tablespoons salt
1 sliced onion
1 teaspoon pepper
Parsley or Paprika for garnish

Fry diced bacon over low flame until crisp. Add most bacon to cooked potatoes but leave some to garnish.

Add salt pepper and flour to the bacon fat, mix well. Stir in vinegar, sugar and water. Cook until thick. Remove from heat and add thinly sliced onion. Pour over cooked potatoes mixed with chopped onion and green bell pepper. Sprinkle top with some leftover bacon pieces, garnish with fresh parsley.

Allows 2/3 cup per serving.
