Amish Fresh Pie

Cherry pie Ingredients
2 cups fresh sour cherries, pitted
1 tablespoon real lemon juice or vinegar 
1-1/2 cups brown sugar 
1 (3 oz box) clear Jell-o gelatin
Pinch of salt
2 tablespoons butter
1 teaspoon vanilla extract

Variation for cherry peach pie 
Use 1 cup fresh sour cherries and 1 cup fresh 
sliced peaches.

Cherry pie Instructions
Put cherries in saucepan; add enough water to cover cherries. Add real  lemon juice, brown sugar and salt. Bring to boil. Thicken with clear Jell-o  gelatin. Turn down heat enough to slow boil  for 2 minutes. Remove from stove and add butter and vanilla (optional; add peaches now.) Pour into unbaked 9 inch pie shell. Put crust on top and bake at 375-F until light golden brown. Let cherry pie cool before serving.
