CHICKEN SALAD
Chunky Chicken Salad Recipe

Pass through the food chopper enough cold cooked or canned chicken to make 1 and 1/2 cup. Next, remove chicken and pass through chopper, 2 hard boiled eggs. 

Mix everything together with;
2 teaspoon salsa sauce, 
3 tablespoon juice from a dill pickle jar, 
1/3 teaspoon mustard powder, 
Pinch of salt, 
3 to 4 tablespoons of mayonnaise, 
¼ cup chopped celery, 
A few drops of Worcestershire sauce, 
Dash of black pepper.. 
* Optional; 1/3 cup diced tomato
* Optional; 1/3 cup fine chopped apple.

Gently blend thoroughly. Generously spoon some filling on a piece of wheat bread. Cover with a lettuce leaf and a slice of white bread, slice diagonally. Serve with potato chips.

*A lightly buttered, oven toasted, sliced hoagie roll is wonderful, add 2 slices of fried bacon to make it a deluxe sandwich.

 Makes 2 to 3 sandwiches

When serving as a salad topping, mix chicken salad with 1 tablespoon chopped pecans, 1/3 cup pineapple chunks and place one scoop of the chicken salad over a bed of lettuce.
