CHICKEN SALAD STUFFED TOMATO
Ingredients
1-1/2 cup diced, cooked chicken
1/4 cup mayonnaise
3/4 cup diced cucumber
Salt and pepper to Taste
1/4 cup chopped pecans or walnuts
6 tomatoes
Lettuce
Parsley
Method
Scald tomatoes in a pan of hot boiled water for about 2 minutes, peel and chill the medium sized tomatoes. Scoop out the inside of the tomatoes. Remove seeds from the pulp. Chill the ingredients and when ready to serve, mix cucumber, salt and pepper, chicken, tomato pulp and the nuts with mayonnaise. Add salt to taste. Use this mixture to fill the scooped out tomatoes. Arrange on lettuce leaves. Garnish each tomato top with parsley.
