ELVIS TENNESSEE CHILI
Diner Chili Recipe
Ingredients
1-1/2 lb. hamburger
1/2 teaspoon crushed red pepper
2 teaspoon salt
1 cup chopped onion
2 teaspoon paprika
5 tablespoon chili powder
1/2 tablespoon cumin
1/2 teaspoon garlic powder
Put all spices above in a baggie and shake to mix.
Method
In a separate pan add 2 pounds hamburger and onions to 2 cups of water. Bring to a boil, cover and reduce heat and simmer until meat is no longer pink. Mash hamburger during cooking with a potato masher to break into smaller pieces. Do not overcook.
Next In a large soup pot, 3 cup water
1 can tomato sauce, 15 oz.
28 oz. can stewing tomatoes
2 cup tomato juice
All mixed spices in baggie
3 cans dark Kidney beans, 15 oz. each
All the fried meat and grease
Cover and low simmer for 1-2 hours stirring frequently
Top each serving with shredded cheddar cheese and serve with Oyster crackers.
Yields: 7-8 servings.
