How to Boil a Ham

Put into kettle a large uncooked ham (15 to 20 pounds). Cover with water, add one large onion, 3 cloves garlic and allow to come to boil. 
Optional: for a sweeter ham add 6 Cloves garlic, 2 cups 
brown sugar and ½ pint of pineapple juice instead. 

Simmer or boil slowly for about 6 hours, or until tender. Let stand submerged in water over night. In the morning remove from water and let stand on rack. Remove bone and tie ham with butchers string then refrigerate, when cold it is ready to slice.

How to Bake a Ham:
Purchase either half or a whole fresh ham. Wash thoroughly and salt well on all sides. Insert a dozen Cloves in and around top of ham. Set aside in refrigerator for several hours. Pare two whole apples and add to the roaster with ham. Also add one large onion cut in slices, one carrot cut in pieces, add black pepper, 2-3 cup water (maintain this level throughout cooking), bake in preheated oven covered with tin foil  at 375-F for two or three hours, depending on size of ham. Turn meat over in pan as it is baking, about half hour intervals. Last hour,  place several pineapple slices on ham and sprinkle with 1/3 cup brown sugar. Allow to bake more only until done and tender. Serve warm.

*Using any pan juices,  mix with 1 teaspoon corn starch, 1/3 cup Pepsi cola and 1/4 cup of pineapple juice, slow boil everything in a sauce pan until it thickens. Pour this sauce over the ham, slice and serve.

Easy and Quick Recipe for 1/2 of an Uncooked Ham
Ingredients and Method:
½ of a Ham 5-6 pounds (uncooked)
1 cup brown sugar 
1-1/2 cups Coca Cola
1 cup crushed pineapple

Wash the uncooked ham
Rub ham with brown sugar
Place ham in roasting pan
Pour coke and pineapples over it
Cover or Tent Ham with Aluminum Foil
Bake at 375-F for 3 hours or until done.
Check every 1/2 hour after first hour and add a little water as needed to keep pan from going dry and burning bottom.

Serves 6

How to heat and prepare an already cooked ham

Mix 3 tablespoon honey with 1/3 cup sweet syrup from canned fruit (Pineapple, Peaches, etc;) add and mix in 1/4 teaspoon ground clove spice. Brush mixture all over the ham. Sprinkle ham with some brown sugar. Wrap the ham tight with aluminum wrap. Heat in oven for 60 minutes at 225-F or until heated.

Old Fashioned Recipe

2 cups raisins
10 cloves
2 cups water
Another 1/3 cup water to mix with corn starch 
1-1/2 cups brown sugar 
2 tablespoons cornstarch
1 teaspoon cinnamon
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons vinegar
1 teaspoon Worcestershire Sauce
2 tablespoons butter

Wash rinse raisins. In a saucepan, cook them slowly with cloves in 2 cups water for about 10 minutes or until very soft. Mix the corn starch with 1/3 cup cool water and add it to the sauce pan stirring constantly until thickened. Now, mix together the brown sugar, cinnamon, salt and pepper then add to raisin saucepan. Now, add the vinegar, Worcestershire sauce and butter stirring constantly until blended. 
Serve hot spooned over sliced baked ham. 
Makes 16-20 servings
* 1 teaspoon grated orange rind cooked with the raisins is optional.

Serve raisin sauce over ham, pork, bread pudding, ginger bread, poultry, pumpkin pie.
