Cucumbers In Sour Cream Sauce

2 large cucumbers
3/4 of a medium onion sliced thin then smashed with bottom of a cup, use sweet onions or red salad onions
1/4 cup chopped green bell pepper
1 tomato sliced in wedges then halved.
1/4 cup white wine vinegar
1 tablespoon extra virgin olive oil
1 tablespoon sugar
3/4 teaspoon salt
1/4 teaspoon black pepper
½ cup sour cream
optional: 1/4 teaspoon dill weed powder
1/4 cup water
1/4 cup water again

Skin cucumbers and slice very thin, slice the onion thin and smash (flatten) onions with the bottom of a cup. Mix the oil, vinegar, 1/4 cup water, sugar, dill weed, salt, and pepper and pour over vegetables. Mix and marinate at least 1 hour. Next, *Important, drain off all juice through a strainer and throw juice away. Mix the sour cream with 1/4 cup water and then mix it in with the salad. Refrigerate until ready to use.
