Curried Fruit Sauce
Warm curried fruit is very delicious alone or spoon over biscuits, waffles, pancakes, over cake including pieces of birthday cake, the fruit can be topped with ice cream. Use one or more kinds of fresh or canned fruit, thicken the sauce and flavor it with curry. Children enjoy it spooned over Hostess or similar type cakes. It is exquisite when served over pork and lamb.

Approximate. Cooking Time: 11 minutes
Yield: about 6 servings
1 can (17 oz) apricot halves, drained (reserve syrup)
1 can (16 oz) peach slices, drained (reserve syrup)
¼ teaspoon curry powder
¼ teaspoon ground cinnamon
1 tablespoon cornstarch
¼ cup water
½ cup raisins
1. In a microwave bowl, combine 1 cup reserved syrups, curry and cinnamon; heat in a microwave 2 to 3 minutes on HIGH, remove from microwave oven and slightly cool.
2. Now stir in cornstarch blended with water and heat in microwave 1-½ minutes on HIGH until slightly thickened, stirring occasionally.
3. In another microwave bowl, combine apricots, peaches and raisins; heat for a couple of minutes or less until fruit is just heated through, stirring once. Remove from microwave oven.
4. Pour in the sauce from the first bowl to combine everything and heat for 1 - 1 ½ minutes on HIGH.
