The best eggs for peeling after boiling are those a week or more old as older eggs will develop a large air pocket that simplify the peeling process.                                                 

Eggs are good to use 28-35 days after the pack date (This does not mean the “Sell By” date.) For more information about the “Pack Date” go here or have your grocery store explain how to read the pack date code. To Simplify; If eggs are purchased from an established grocery store you can rely on, do not hesitate to use eggs for up to two weeks after the “sell by” date.
