Pan Fried, Baked Crispy

1 cup flour for coating
1 cup breadcrumbs for coating
Salt and pepper to taste
1 teaspoon sweet paprika
1 onion cut in half, throw away onion after rubbing fish
Use 1/4 cup butter and 1/4 cupĀ 
cooking oil for frying
1 egg, slightly beaten
2 tablespoon salt mixed with 2 cups milkĀ and 2 cups water to soak fish

Rub fish with salt and paprika, then with an onion, season with pepper; place in a pan and pour in the salted milk and water mixture to cover fish, cover pan with a lid or foil and place in refrigerator overnight.
Next day; Wipe fish dry and coat it in flour. Thin a beaten egg with 1 tablespoon water, then dip fish in the egg mix, next roll fish in breadcrumbs. Let set for 5-10 minutes. Using a medium heat, fry fish in a half and half mixture of butter and cooking oil only until coating is a light golden brown on both sides, remove fish and place in a baking pan, bake about 20 minutes in a 300-F oven. Fish is done when it flakes with a fork. Garnish with lemon slices.
