Golden Fried Catfish Fillets, Breaded Fillet Recipe

Start with 4 Catfish fillets

1 cup corn meal
1 cup all purpose flour, sifted
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon ginger
3 eggs
2 tablespoon water
Cooking oil

Mix the corn meal, flour, salt, and pepper. In a different bowl, add the eggs, water, ginger and beat. Dip the fillets into the egg mixture and then coat both sides of fish with the corn meal and flour mixture. In a skillet, fry the coated fish in hot oil (300-F on Medium) until you see the outer edges coating turning a light golden brown then turn over once, when fish flakes with a fork it's done. Do not overcook.
