FRIED TOMATOES AND APPLE 
FRITTERS RECIPE
Use mature Green Tomatoes just before 
they begin to ripen.

Tomatoes
Slice green tomatoes about 1/2 inch thick. 
Dip them in a batter made with 1 beaten egg mixed with 1/2 cup flour and a little salt then thin batter with some
water mixing all to make a smooth thin paste. When paste is slightly thin and smooth, dip the tomato slices into the 
batter then drop them into a fry pan with hot oil. 
Use one part butter with two part canola oil. 
Fry until golden brown.

Apple Fritters
Slice 4  peeled Granny Smith apples into thick 
slices, dip them in a batter made with 3 beaten 
small size eggs or 2 large eggs mixed with 
1 cup flour and 1 tablespoon sugar then thin 
batter with some water or milk adding it slowly 
and mixing to get rid of lumps as you want to make 
a smooth thinned paste.
Fry apples using a medium heat and use canola oil. 
Use enough oil, between 2 and 3 inches, so that the 
fritters float freely.
Let cool then sprinkle them with a generous amount 
of powder sugar before serving.
