I have just read your advice on roasting lamb - and there is a VERY BIG problem!!! You are obviously VERY confused over fahrenheit and centigrade temperatures, since if one followed your instructions the joint would be barely warm, let alone cooked!!!

Dear Mary,
Thank you for your concern. We stand-by our chart information. If you return to our cooking chart: The top of the chart mentions "Per Pound" If you are cooking a 5 pound roast then the cook time would be 5 times the 1 pound cooking time. Example: 22 minutes per pound would be five times that. 22 x's 5 = 110 minutes (almost 2 hours cooking time) Here is the chart site again. http://recipehut.homestead.com/LegLamb.html

I have been looking for years for the Lums Beer Hotdog recipe, and have tried many times to make one but they were poor copies - this is the real deal and unbelievably delicious! I never would have guessed the recipe! You rock!
BTW, anybody else who is looking for the LUMS hotdog steamed in beer recipe can find it under Sauces: http://recipehut.homestead.com/bigboysauce.html LUMS made the best Hotdogs ever - no comparison to the typical hotdog, they are fine cuisine. Too bad they were bought out, most of the stores were converted into Chili's in the New England area - I first fell in love with these in Florida... Question RE: Your fresh egg test and photos. I tried your water test and my eggs lay flat, but when cracked in the pan they looked like the three week old picture. How can this be? Thank you, Diane, Maryland...
Recipehut Answer: The fact that your eggs laid flat during the fresh egg water test certainly proves that the eggs you were using were indeed fresh. The egg dish-test experiment should be conducted on a cool dry plate. In your case, you mentioned “In a fry pan,” if your pan was warm or hot and had melted butter or cooking oil in it the outer egg white ring will run but the bulk of the white nearest the egg yolk will be thicker and mounted higher around the yolk when the egg is fresh. To decrease the cooking size of an egg simply fold the outer rims of the cooking egg whites over towards the center of the yolk as soon as it sets and before flipping the egg over.
