Halibut Fish Steaks 
(Two Good Recipes)

4 Halibut Steaks, 
about 6 ounces each

Sauce Ingredients:
4 tablespoons peach sweetened syrup nectar from a can peaches
1/4 cup mayonnaise
1/4 cup plain low-fat yogurt
1 tablespoon ketchup
2 teaspoons grated orange peel
1 teaspoon curry powder
Salt and pepper to taste

Arrange the fish in a broiling dish. Combine nectar with mayonnaise, yogurt, ketchup, orange peel, and seasonings. Spread the mixture over the fish and marinate for 30 minutes. Broil for 4 to 5 minute each side or until fish flakes easily. 

Serves 4-6

#2 Halibut Fillet Recipe - With Rub Spices

4 halibut fillets, about 6 ounces each and 1 inch thick.

Rub Recipe:
1 teaspoon curry powder
½ teaspoon kosher salt
½ teaspoon ground cumin
1/4 teaspoon turmeric
1/4 teaspoon paprika
Pinch of cayenne pepper
1/8 teaspoon freshly ground black pepper

Mix the spices together. Lightly brush or spray both sides of the halibut fillets with Extra-Virgin olive oil. Rub the halibut fillets on all sides with the seasoning. Cover fish with plastic wrap and refrigerate for 2 hours or more.

To make the garlic butter: 
2 tablespoons butter with 1 teaspoon minced garlic. Just before serving, heat the butter and garlic in a small skillet over low heat just until the garlic sizzles. Remove from the heat. 

Oven broil the halibut carefully turning over once halfway through grilling time until the fish is just opaque (turning transparent in color) and slightly firm to the touch, 8 to 10 minutes, remove and  brush fish lightly with the prepared garlic butter and serve.

Makes 4 servings.
