DOUGHNUTS
Doughnut, Sweet Bread
and Raisin Bread Dough

4 egg yolks
1 cake yeast
2 cups milk
2 tablespoon butter
3 tablespoon sugar
1 teaspoon. salt
6 cups flour
Fat for frying
* Optional; 1/2 cup raisins can be added in
bread loaf dough.


Mix yeast and sugar in lukewarm milk. Let stand until other ingredients are mixed. Mix yolks with butter, salt and then the yeast mixture. Add flour, beat well with a wooden spoon. Add some more small portions of milk or flour if needed to make a soft dough. Let stand for an hour. Flour the board and roll dough about an inch thick. Cut out (using cutter or a drinking glass or coffee cup rim) on floured board, cover, and let stand for another hour. Fry in deep fat until golden colored. Sprinkle generously with powdered sugar or roll in regular sugar.

White Gaze Icing Recipe

1/3 cup water
1/3 cup sugar
2 teaspoon cornstarch
pinch salt

Stir while bringing to a boil and sauce thickens, let cool and add 1 teaspoon vanilla and 1 teaspoon lemon juice. Brush on sweet rolls, on top of bread loaf and on doughnuts.
