POTATO CAKES
Lent Cakes or AnytimeVegetarian Cakes
Ingredients
5 potatoes
1/2 pound prunes
1 onion
3 tablespoon flour
2 eggs, beaten
Salt and pepper
Method
Grate potatoes and onion; add eggs, chopped prunes, flour, salt, and pepper. Mix well. Put in a 9" x 10" x 2" greased pan. Bake in 350-F oven for 15 minutes, rub a little shortening on top, return to oven, bake one hour or longer. When baked, cut in squares and pour on some fried browned butter that is mixed with a small amount of vinegar.
Serve with a meatless soup.
