How to make Fresh Kielbasa Sausage
Ingredients
5 pound pork butt, ground
2 and 1/2 tablespoons salt
2 pounds leg of veal, ground
1 teaspoon pepper
5 yards casings
5 clove garlic, chopped fine
1 teaspoon caraway seed
2 cups cold water
Method
Grind meat in coarse grinder and mix well with other ingredients. Wash casings thoroughly and stuff them with meat mixture. Place in refrigerator or cold place until ready to cook. Cook with sauerkraut and spareribs. Cook 30 to 40 minutes.
Sausage Salad Recipe
Cook sausage and slice thin (about 3/4 of a pound)
1 small onion trimmed, peeled, sliced thin
salt (to taste )
freshly ground black pepper (to taste)
3 tablespoons red wine vinegar
4 tablespoon vegetable salad oil
In a salad bowl combine sliced cooked sausage and sliced onion. In a small bowl whisk together vinegar, oil, salt and pepper. Pour dressing over sausage and onions, toss and serve with crusty rye bread.
