


MASHED SWEET POTATOES
Roasted then mashed sweet potato
or for a Holiday recipe add pecans and marshmallows
Ingredients
4 Large Sweet Potatoes, washed
5 tablespoon brown sugar
½ teaspoon Cinnamon
1/4 teaspoon Nutmeg
Salt and Pepper, to season
3/4 stick butter at room temperature
1 cup milk or less
Salt and Pepper, to season
Set the temperature of the oven to 400F.
Bake four sweet potato wrapped in aluminum foil until a fork inserts easy into the middle.
Method
Let potatoes cool until they can be handled enough to peal off the skins then cut them into several pieces. Place a saucepan over a medium heat. Add the potatoes. Add 1/2 cup of the milk, butter, brown sugar, cinnamon, nutmeg then season with salt and pepper. Begin mashing the potato. If they seem a little stiff, add more of the milk. Remove them from the heat.
Serves 5-6
For a Holiday treat, spread out mashed sweet potatoes in a buttered baking dish then top with crumpled frosted flakes, lay on pecans then marshmallows and bake in a 325-F oven only until marshmallows are melted. (Check oven often so marshmallow do not burn.)
