Peanut Butter Cookies
1 stick salted butter, softened to room temperature
1 tablespoon molasses
3/4 cup granulated sugar
Pinch of salt
1 large egg
3/4 cup chunky peanut butter
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1-1/4 cups all purpose flour
Extra granulated sugar for rolling cookie balls
In a large bowl with an electric mixer, cream butter, molasses, salt and sugar together until creamy and fluffy. Next beat in the peanut butter, then the egg, and then the vanilla. Next: slowly mix in the flour and baking soda. Do not over mix. Mixture will be somewhat dry. Chill dough for 1 hour.
Preheat oven to 350 degrees. Remove chilled dough from fridge and roll into balls. Spread a thin layer of granulated sugar on a plate and roll each dough ball to evenly coat.
On an ungreased baking sheet, space cookie balls then slightly mash down top with a fork, bake for 9-10 minutes or until the tops and edges begin to crack. Do not bake longer than this. Cookies may look under baked, but will firm up as they cool.
