PORK CHOP RECIPE
Porkchop Avesnoise
You will need
4 Pork Rib Chops, 1/2" to 3/4" thick
1 tablespoon olive oil
1 tablespoon butter
Salt and freshly ground pepper
1/2 cup finely grated Gruyere cheese
2 teaspoon Dijon mustard
Heavy cream
Method
Trim excess fat from four good sized pork chops and saute' them gently with a little oil and butter in a thick-bottomed frying pan until cooked (Medium 160F / 72C.) Season to taste with salt and freshly ground pepper.
When cooked, spread with a mixture made of finely grated Gruyere cheese mixed with mustard and just enough cream to make a smooth mixture of spreading consistency. Spread chops generously with cheese mixture and glaze quickly under the broiler until sauce is golden. Serve immediately.
Serves 4.
