HOW TO MAKE POTATO DUMPLINGS

Ingredients
2 medium potatoes
1 teaspoon salt
1 egg
2 cups flour
Method
Grate potatoes; add salt, egg and flour.
Mix well. If too stiff add a little
water (1/4 cups or less). Drop small
portions from tip of spoon into boiling water,
boil 7 to 10 minutes, drain, rinse with cold water.
Serve mixed with cottage cheese or cabbage.
Cottage cheese is prepared by browning 1/4 cup butter and pouring over the dumplings. Crumble some dry cottage cheese over the buttered dumplings and add salt. Mix well and serve.
Cabbage is prepared by chopping one small onion, browning it in fat or butter. Add finely chopped head of cabbage, season with some salt and sweet paprika. Fry slowly until done, about 20 minutes. Add dumplings to pan and mix together. Serve hot.
