Potato Cakes

Hash Brown - Baked Cakes - Using Fresh Russet Potatoes

5 medium size potatoes 
1 medium sweet onion 
3 tablespoons flour
2 eggs, beaten 
Salt and pepper

Grate potatoes and onion; add eggs, chopped prunes, flour, salt, and pepper. Mix well. Shape mixture into a square form, put in a 9" x 10" x 2" greased pan. 

Bake in 350-F oven for 15 minutes, rub a little olive oil or pure vegetable cooking oil on top, return to oven, bake one hour or longer. 

When baked, cut in squares or (cookie cutter) round and drizzle some heated oil that is mixed with a small amount of vinegar.
