Double this Recipe for 100 Persons
25 lbs spareribs
Cut spareribs into half pound serving portions, salt and pepper them.
Place in single layers in shallow roasting
pans. Cover well with aluminum foil and bake in 350-F oven for 1-1/2 hours.
Spread with barbecue
sauce and bake uncovered for 1/2 hour or longer until tender, basting
once or twice.
Add small amounts of water if needed.
9 (8 oz) cans tomato sauce
2 bottles ketchup (24 oz each)
4 tablespoons Worcestershire sauce
1-1/2 cups apple vinegar
8 tablespoons chili powder
2 cups minced onion
2 cups brown sugar
1 cup white sugar
2 cups minced green pepper
1 tablespoon Tabasco sauce
2 teaspoons pepper
2 tablespoons salt
Add all ingredients together. Heat and stir until well mixed.
