STUFFED BAKED POTATOES
Cheese, Sour Cream Stuffed Potato
Method
4 medium size potatoes.
Wash potatoes and bake till done, while still hot cut in half length-wise, scoop out most of each potato into bowl then combine with herbs and all ingredients and mash, refill skin shells and put under an oven broiler to brown.
Filling
Use all of the scooped out potato,
8 slices American cheese, cubed,
2 tablespoons milk,
8 tablespoons butter,
1/2 teaspoon minced thyme,
3 tablespoons cream,
1/2 teaspoon finely chopped fresh parsley leaves,
Salt and pepper to taste,
1/2 teaspoon finely chopped chives or one tablespoon green onion stems,
Mash everything together.
