APPLE PIE
Shoestring French Apple Pie
and Amish Apple Pie Recipe.

Ingredients
1 and 1/4 cup white sugar mixed
with 1/3 teaspoon cinnamon
2 tablespoon flour
1/4 cup water
4 cups fine diced green "Granny Smith" baking apples
Optional; 1/4 cup raisins.

Method
Mix well and spread over an unbaked  deep dish pie crust in a  9" pie pan. Sprinkle with crumb mixture. Bake at 400-F (220 degrees C) for 12 minutes then turn down heat to 350-F. Bake until the apples are soft (About 35-40 minutes).

Crumb Mixture
Ingredients;
1/4 cup sugar
1/2 cup flour
3 tablespoon soft butter

Directions;
Combine all sugar, flour and butter until crumbly.

AMISH PLAIN APPLE PIE
Ingredients
Stirring constantly, bring to a boil 3/4 cup cool
water mixed with 2 tablespoon corn starch,
3/4 cup plus 1 tablespoon white sugar
2 tablespoon butter,
3/4 teaspoon lemon juice,
1/3 teaspoon salt,
Pinch of nutmeg,
1/3 teaspoon cinnamon powder.
1/2 teaspoon vanilla extract

Method
Stir rapidly with a wood spoon until
mixture comes to a full boil and thickens,
remove from heat. Stir in vanilla extract.
Let mixture cool for 20 minutes then mix
it with 4 cups thin sliced baking apples
(5 peeled baking apples like Granny Smith
brand) let cool another 15 minutes.
Spoon mixture into an un-baked deep dish pie crust in a 9" pie pan, cover the top with another dough crust. Pinch the dough ends together to seal and make a few slits (+) on top crust. Lightly glaze by brushing top of pie with a beaten egg, then sprinkled with a little white sugar. Bake at 425-F for 12 minutes then turn down oven to 375-F. Bake until the apples are soft and bubbling is coming through the slits (about 35-45 minutes). Tent pie with tinfoil if edges are browning too fast and turn down oven temperature slightly.

TIPS; To keep pie crust from being puffy. Cut several slits (+) in the top crust, which will allow vapor to escape through the crust during baking.
To keep pie crust from turning dark brown, lower the oven temperature, center the pie crust in the oven using the middle-rack position, reduce the baking time.
