Just Apple Pie
Stirring constantly, bring to a boil 3/4 cup cool water mixed with 2 tablespoons corn starch
3/4 cup sugar plus 1 tablespoon sugar
2 tablespoons butter
3/4 teaspoon lemon juice
1/3 teaspoon salt
Pinch of nutmeg
1/3 teaspoon cinnamon powder
1/2 teaspoon vanilla extract
Stir rapidly with a wood spoon until
mixture comes to a full boil and thickens, remove from heat. Stir in vanilla extract.
Let mixture cool for 20 minutes then mix it with 4-5 cups thin sliced baking apples like Granny Smith, let cool another 15 minutes.
Spoon mixture into an unbaked deep dish pie crust in a 9" pie pan, cover the top with another dough crust. Pinch the dough ends together to seal and make a few slits (+) on top crust. Lightly glaze by brushing top of pie with a beaten egg white, then sprinkled with a little white sugar. Bake at 425-F for 12 minutes then turn down oven to 375-F. Bake until the apples are soft and bubbling is coming through the slits (about 35-45 minutes). Tent pie with tinfoil if edges are browning too fast and turn down oven temperature slightly.
