DUMPLING RECIPE - GNOCCHI
Slovak, Hungarian, German Spaetzle Dumpling
Spatzle - Small Dumplings

Ingredients
2 cups all purpose flour
1 teaspoon salt
2 eggs
3/4 cup milk
1 cup fine dry breadcrumbs
1/4 cup butter or margarine, melted
1 and 1/2 cups sauerkraut, lightly fried in a little bacon grease.

Method
Stir together flour and salt, combine eggs and milk and stir in with the flour and salt. Pour batter into a colander with large holes (At least 3/16 inch diameter) or spaetzle maker. Hold colander over a kettle of boiling salted water, press batter through colander to form the small spaetzle dumplings. Slow boil and stir 5 -7 minutes until they float to top then drain pot well. Mix cooked dumpling with  fried sauerkraut; combine bread crumbs with melted butter or margarine then sprinkle crumbs over everything before serving.
