Tuna Patty Burger

Ingredients:
1 (5 ounce) can tuna in water, drained very well by pressing
1 egg, beaten
2 tablespoons Italian-style seasoned dry bread crumb
2 tablespoons sweet onion, finely chopped
1 tablespoon chopped celery
Salt and pepper to taste
1 teaspoon mayonnaise
1/4 teaspoon sweet paprika 

Instructions:
In a mixing bowl, combine everything; shape mixture into two patties.

In a non stick frying pan, heat extra virgin olive oil over a medium heat. (Olive oil will fry it crunchy without being greasy)

Fry one side of tuna patties (undisturbed) to a golden brown, before carefully turning over to fry the other side.

Serve on two hamburger buns (toast the inside of the buns in a fry pan), 

Add lettuce leaves and mayonnaise to each sandwich. 
Optional: Thin slice of tomato, slice of cheese. 

These are delicious when eaten cold, wrap them and place in the refrigerator for the next day, they remain crunchy on the outside. Eat them plain or make a cold sandwich.
