Baked Acorn Squash

2 Acorn Squash, 1-1/2 to 2 lb
1 tablespoon butter, in each acorn half
2 tablespoons brown sugar mixed with 1/8 teaspoon cinnamon, in each acorn half
Marshmallows Optional: Place 2 marshmallows 
in each cavity the last 2 minutes of baking time
Optional: Place some chopped dried dates or other fruit in cavity

Cut Acorn squash lengthwise in half. Scrape out the seeds and fibers with a spoon.

Heat the oven to 400-F. Place squash, cut sides up, in a baking Dish. Sprinkle cut sides with salt and pepper. Place margarine or butter in cavity, using about 1 tablespoon for each squash half. Pour water into baking dish until it is about 1/4 inch deep. Cover with aluminum foil.
Bake 30 to 40 minutes or until tender when pierced with a fork. Sprinkle each half with 2 tablespoon brown sugar mixed with 1/8 teaspoon cinnamon while very hot.
