Carrot Cake 

1-1/2 cups sugar
1 cup vegetable oil
3 eggs
2 cups flour
1-1/2 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon salt
1/4 teaspoon nutmeg
5-6 carrots (3-1/2 cups chopped) Use a Food chopper 
1/2 cup yellow raisins
1/2 cup cranberries

Heat oven to 350-F. Grease and flour pan 13x9x2. Mix sugar, oil and egg n a large bowl until blended smooth, beating with wooden spoon Stir in remaining ingredients (except carrots). Beat for one minute with spoon, then stir in carrots.
Bake about 60 minutes but check at about 50 minutes and just add more time as needed as it depends on your oven. Check for doneness inserting a toothpick in center. You want the toothpick to come our clean.

Serves 8

Optional: add some chopped nuts 

When cake is completely cooled, ice with powder sugar frosting.

For an extra treat: top each cake serving with 1 scoop of ice cream, cake à la Mode. It’s delicious.
