1.) One large whole de-boned chicken (about 4-5 lbs.) ask the butcher to de-bone it.

2.) Kosher salt

3.) Extra virgin olive oil or coconut oil

A.) Rinse the chicken and pat dry with paper towels. 

B.) Lightly brush chicken pieces with olive oil.

C.) Salt the chicken with kosher salt 2-3 hours or overnight prior to cooking and keep in the refrigerator until ready to cook.

D.) Preheat the oven broiler. Place the chicken, skin side up, on a baking sheet pan lined with tinfoil (it makes cleaning the pan easy) place it under the broiler, about 3-5 inches from the heat and brown and the skin about 10 minutes or more. Move the pan around one time until crisp for proper browning. Turn the oven boiler off and turn oven heat temperature to 250-F and bake chicken for 25 minutes or until chicken temperature reaches 165-F

E.) Slice the chicken into serving size pieces.
