CHICKEN SALAD
Spoon on toasted bread, buns, sub buns or 
place a scoop on lettuce.

Makes 4 servings.

​Ingredients:
1-1/2 cups chopped left-over cooked chicken or canned chicken
1/3 cup chopped celery
1/3 cup chopped sweet onion
½ to 1 teaspoon salt
¼ teaspoon black pepper
½ teaspoon sweet paprika
1 teaspoon lemon juice
1 teaspoon mustard
4 tablespoons mayonnaise or more to your liking

Instructions:
Mix by lifting and folding everything over (stirring in circular motion will break up chicken pieces)  cover and refrigerate 1 hour or more.

Optional (add as many as you like)
1 chopped hard boiled egg
¼ cup chopped red or green bell pepper
1/3 cup chopped apples
2 tablespoons raisins
1 tablespoon chopped pecans
1 teaspoon sugar
2 tablespoons fine diced carrots
