OLD FASHION CHILI
Robust Old Fashion Diner Recipe
Ingredients
1 pound ground meat (Your choice of hamburger,
ground chuck, ground sirloin, ground turkey
or small pieces of cubed beef.)
28 oz. can dice or crushed tomato,
14.5 oz. can tomato sauce,
6 tablespoon sweet/mild chili powder,
2 teaspoon cumin spice,
6 cups water,
1 tablespoon red wine vinegar,
1 teaspoon sugar,
½ tablespoon instant coffee,
6 inch chopped Anaheim pepper with a bite ranging from mild to hot.
Three, 15 oz. can red kidney beans, drain off juice and rinsed
½ teaspoon garlic,
1 teaspoon salt,
1/4 teaspoon black pepper,
1 medium sweet onion, chopped.
1 small bell green pepper, chopped.
3 tablespoon butter,
Method
Add all above (except the meat, butter, onion, green pepper, salt, black pepper and minced garlic) to a large pot such as a stock pot. Heat this main pot using a medium low heat.
Meanwhile Lightly fry one medium chopped onion and one small chopped green bell pepper in three tablespoon of butter then add it to the main pot.
Next Fry ground meat, using a medium low heat, in a skillet in 1/3 cup water, ½ teaspoon minced garlic, 1 teaspoon salt and 1/4 teaspoon black pepper. Use a potato masher to break up meat into small pieces as it fries. Fry until meat is no longer pink and juice is clear but do not over fry. When finished, drain off oil, transfer fried meat into the main pot.
Bring the main pot to a boil while stirring, reduce heat to extremely low. Cover pot and simmer 3 hours stirring occasionally and adding small portions of water if needed to maintain level.
Produces 7-9 Servings
Serve with plenty of oyster crackers.
