Fish and other Seafood Sauces
Makes for a good Sauce
1 tablespoon Ranch Dressing
1 teaspoon mustard
1/3 cup mayonnaise
1-½ teaspoon sugar
Small pinch of Salt
½ teaspoon lemon juice
2 tablespoons dill relish
2 teaspoons dehydrated onions
Mix everything together well. Refrigerate sauce for awhile to allow everything to blend and the dried onions to become soft
When ready to serve, heat sauce just enough to take the chill off it
Makes enough sauce for 4-5 servings
Some may prefer a sauce of just melted butter poured over the fish, fresh lemon wedges to squeeze over the fish and a little fresh parsley broken up to sprinkled on fish or lay some whole parsley twigs on the fish. (Remember to eat the parsley as it is very healthy and it will clean your breath.) Or: for flavor and appearance you may also pour some melted butter over fish then squeeze on fresh lemon juice, sprinkle with a little paprika and garnish with fresh chopped chives
Fish Tartar Sauce Recipe:
A sauce will add flavor and zest to all Seafood.
2 hard boiled egg yokes,
Salt and pepper to taste mixed with the two hard boiled eggs yolks until quite smooth and free from lumps
1 cup of olive oil
2 teaspoons dill relish
1 tablespoon chopped green onion tops
4 tablespoons red wine vinegar
3-4 tablespoons mayonnaise
Gradually beat in 1 cup olive oil with 3 to 6 tablespoons vinegar. Add the very finely chopped green onion tops, relish and the mayonnaise to the egg yolk mixture and beat until very smooth. This can be served hot or cold.
It is also good as an appetizer sauce. Excellent with scallops, fish, shrimp or cold cuts and cold chicken.
Baked Fish White Fish Sauce Recipe:
1 onion, chopped
3 slices American cheese
1 tablespoon butter
1-1/2 cups milk
1 tablespoon flour
Melt butter, add onion and flour, brown, Add cheese and milk. Cook until cheese is melted and sauce is thick, pour over fish, and put in oven and bake for 20 minutes or until fish flakes using a fork to test.
Fish & Seafood Cocktail (Red) Sauce recipe:
1/2 cup Salsa sauce (jar preferred)
½ cup Ketchup
2 teaspoons Horseradish, finely shredded
1 tablespoon Lemon Juice
2 teaspoons soy sauce Worcestershire Sauce
This basic seafood cocktail sauce with salsa and ketchup will give it a nice flavor. Mix all ingredients together and let stand 1/2 hour before serving. Makes 1-1/4 cups.
SHRIMP SAUCE RED DIP
Ingredients and Method:
1/2 cup mild salsa sauce
2 tablespoons lemon Juice
1/4 cup Ketchup
Dash of hot sauce
1 teaspoon Worcestershire sauce
Pinch of salt
1/3 cup horseradish
Combine all ingredients and chill.
Use as a dip with shrimp or with raw oysters.
Ingredients and Method
1 cup mayonnaise
1 tablespoon tarragon vinegar
2 tablespoons Ketchup
1 teaspoon lemon Juice
2 tablespoons mild salsa sauce
Mix all ingredients together and chill. Use it as a seafood dip.
Honey Mustard Dip Sauce
1/2 cup orange marmalade
3 tablespoons Dijon mustard
1/4 cup honey
Hot sauce to taste
Combine marmalade, mustard, honey and hot sauce to taste.
