Oven Roasted Fish
baked to perfection

Start with 4 lbs. fish

1 cup whole milk 
3 tablespoons butter or shortening 
2 tablespoons paprika
2 large onions, sliced
1/4 teaspoon garlic salt
1/2 teaspoon pepper

Use white fish, bass, small haddock, mackerel, snapper or kingfish. Cut fish in thick steaks or fillets. Use either a roasting or baking pan, depending on the size of fish. Melt butter or other shortening, add sliced onions and fry (Saute) until light yellow. Place in bottom of baking dish and place fish over the onions. Beat the milk lightly with the paprika, salt, pepper and garlic salt, and pour over the fish. Place in a moderate oven (375-F) and bake, basting frequently. Fillets may take 20 to 25 minutes to bake and large steaks may take 30 to 35 minutes. Remove fish to service dish and strain pan juice over fish. Sprinkle with a little chopped parsley and serve with red boiled potatoes that have been sprinkled with parsley and dredged with melted butter.​
