1 cup all purpose flour
1/4 cup sugar
3/4 teaspoon salt
1-1/2 teaspoons baking powder
1 teaspoon cinnamon
1/3 cup milk
1 cup chopped apple
Combine flour, sugar, salt, baking powder, cinnamon. Stir in milk and egg until just blended. Fold in apples. Add oil to a skillet so that it is approximately 1-1/2 to 2 inches deep. Heat oil on medium heat. Oil is ready when a little dough thrown in sizzles to the top (do not overheat). Carefully spoon dough into oil in heaping tablespoons. Let it sizzle until golden brown, about 2 minutes, then flip. Cook another 1-2 minutes, until both sides have browned. Transfer briefly to paper towels to drain excess oil, then transfer to a cooling rack.
Fritter Icing Glaze
1 cup confectioner sugar
1 tablespoon butter, melted
1/2 teaspoon vanilla
2 teaspoons, room temperature,
Making the fritters glaze directions:
Mix the confectioners' sugar, butter, and vanilla together.
Adding half the orange juice to start with, stir in to make a thick glaze, adding just a drop at a time more until you get a nice thick glaze.
Spread or spoon immediately over warm fritters. Wait approximately 3 minutes for glaze to harden, then flip fritters and drizzle glaze over the other side.
This can also be used on cinnamon rolls, pastries, pound cakes, or Danish rolls.
Glaze will form a crust and harden as it cools, but you can spread over warmed cakes and serve that way as well.
Optional: To make small fritters use a teaspoon to spoon out mixture.
