Ginger Sweet Chicken
Broiled Chicken in Ginger Sauce

8 chicken thighs 
1 tablespoon salt
1/3 cup finely chopped fresh ginger root
2 scallions, finely chopped
1 garlic clove, finely chopped
2 tablespoons peanut oil
1/2 cup honey
1/4 cup soy sauce
2 tablespoon sugar
1 tablespoon sesame-seeds

Sprinkle the salt over the chicken pieces and set aside. Then set aside the ginger root, scallions and garlic in separate piles on a plate. Heat a skillet or wok. Add the oil and lightly brown the ginger, then add the scallions and garlic and stir fry for 1 minute. Add the soy sauce, honey and sugar, and bring to a boil. Turn off the heat and add the sesame-seed. Put the chicken pieces in this sauce rubbing it all over and marinate for at least 1 hour or longer in refrigerator.
Preheat the broiler to 450-F. Place the chicken pieces meat side up on the rack of the broiler pan and broil using the center oven rack and broil until light golden brown. Baste once with the left over marinade. Turn over the chicken pieces and broil for several minutes more until light golden brown. Do not baste again so that the skin may become crispy. Serve hot.
