Vegetable cooking oil for deep-frying 
1 cup yellow or white cornmeal
2 tablespoons maple syrup 
1/2 cup all-purpose flour 
1 teaspoon baking powder 
1 teaspoon salt
2 tablespoons finely minced onion 
1 cup buttermilk
1 egg

In a mixing bowl, combine all dry ingredients then mix in the onion. Beat the egg with the milk and maple syrup; mix everything together well. Let stand for 10 minutes. 

In a deep fryer or heavy, deep skillet, heat 2 to 3 inches of oil over medium heat to 375-F

Drop batter by tablespoons into hot oil. Fry until golden brown, turning several times. Drain on paper towels. 

Makes about 15 hushpuppies.​
