Garlic and Olive Oil Dip  

Dip for Pita and Flat-breads 

4 garlic cloves, peeled
1/2 cup lemon juice 
2 teaspoons salt
Pinch of cayenne powder
1 tablespoon Balsamic Vinegar 
2 cups Extra Virgin Olive Oil 

Put in blender, oil, lemon juice, pepper, garlic vinegar and salt. Blend until mixed.

Another Way:
Put in blender, lemon juice, garlic, pepper, vinegar and salt. Blend until smooth on medium. Next add oil very slowly. Blend constantly on about medium. It should become thick and white like salad dressing. Refrigerate in a glass container. 

Serve with meats, as a seasoning in salad dressings or on pocket bread sandwiches or tear off pieces of Asian flat bread and dip in it. If sauce separates while in storage, just stir or blend again.
