HOW TO MAKE POTATO PANCAKES
Potato Palacinky

Ingredients
1 cup mashed potatoes
(save some water after boiling potatoes)
3/4 cup evaporated milk mixed
with 3/4 cup potato water
1 cup flour
1/2 teaspoon salt
4 stiffly beaten egg whites
4 beaten egg yolks

Method
Combine potatoes, salt, beaten egg yolks and liquid then mix in the flour leaving some small clumps of flour (makes flakier pancakes,) next fold in egg whites and fry in a greased frying pan with extra virgin olive oil which makes the outside crispy when frying and using a medium low heat.
