Ritz Crackers Cake
 Coconut Nougat Dessert
You will not believe how delicious!

3 egg whites
3/4 cup sugar
25 plain Ritz crackers, very crushed
1 teaspoon vanilla
1/2 cup pecans, chopped
1 half pint heavy whipping cream
2 tablespoons sugar
3 -1/2 oz bag of Angel Flake coconut
Note: Save a little coconut to sprinkle over the top of cake when done

Beat egg whites gradually adding 3/4 cup sugar while beating until stiff. Fold in crushed crackers, vanilla, nuts and coconut. Put into a 8" x 8" x 2" greased baking dish and bake at 350-F for 20 or 30 minutes using a toothpick test to see if done. Remove from oven and let cool.

Whip the cream adding 2 tablespoon sugar. Spread on cooled cake, sprinkle with coconut, lightly cover and chill overnight.

This cake is so good you will want seconds so it is suggested to double this recipe especially if you are serving more then 6 persons so use a 13" x 9" x 2" metal baking pan if you do.
