FRUIT SCONE - BAKED BLUEBERRY BISCUIT
Ingredients
2 cups flour
4 teaspoons baking powder
3/4 teaspoon salt
1/3 cup sugar
4 tablespoons butter
2 tablespoons vegetable shortening
3/4 cup heavy cream
1 egg
Handful of blueberries (You can also substitute
with other dried soft fruit like figs, apricot,
cranberries, peanuts, trail mix, etc.
Chop fruit into small pieces if needed.)
You can also make them plain and top them
with warm fruit jam.
Heat oven to 375 degrees.
In a large mixing bowl, combine flour, baking powder, salt and sugar. Mix well. Cut in butter and shortening; like making pie dough. In a separate bowl, combine cream with beaten egg then add to dry ingredients. Stir in fruit carefully without mashing blueberries. Turn dough out onto a floured surface. Roll out the dough to 3/4" thickness and cut biscuit into squares or use a cookie cutter to cut them into rounds. Bake for 15-20 minutes or longer until brown.
Makes 12 to 16 scones.
