Sweet Potato or Yams

4 large sweet potatoes, washed
5 tablespoons brown sugar
½ teaspoon cinnamon
1/4 teaspoon nutmeg
Salt and pepper to taste
3/4 stick butter at room temperature
1 cup milk or less 
Set the temperature of the oven to 400-F. 
Bake four sweet potato wrapped in aluminum foil until a fork inserts easy into the middle

Let potatoes cool until they can be handled enough to peal off the skins then cut them into several pieces. Place a saucepan over a medium heat. Add the potatoes. Add 1/2 cup of the milk, butter, brown sugar, cinnamon, nutmeg then season with salt and pepper. Begin mashing the potato. If they seem a little stiff, add more of the milk. Remove them from the heat.

For a Holiday treat, spread out warm, mashed sweet potatoes in a buttered baking dish then top with crumpled frosted flakes, lay on pecans then marshmallows and bake in a 325-F oven only a couple of minutes until marshmallows are melted. (Check oven often so marshmallow do not burn.)
