Taco Soup

1 medium/large onion, diced and lightly fried until transparent in olive oil
1 tablespoon granulated garlic
2 (15-ounce) cans chili beans, drained
1 (7-ounce) can diced green chilies, drained
2 tablespoons chili powder
1 1/2 teaspoons cumin powder
1 tablespoon chocolate baking cocoa
½ teaspoon cinnamon
1 pound ground beef (lightly browned and broken up with a potato masher)
1 (15-ounce) can diced tomatoes
1 can of beer 
2 cans (14/½ oz each) chicken broth well mixed with 3 tablespoons corn starch
Salt and pepper, to taste
Optional: a packet of taco seasoning
Shredded sharp white cheddar cheese, for garnish

1. In a five- to six-quart slow cooker, combine everything and mix.
2. Cover, and cook on high for 4 hours (or on low for 5-6 hours), Salt and pepper to taste. 
Garnish each serving with shredded cheese

Yield: 6-8 hefty servings
