


QUICK Tomato Sauce (Very Delicious)
Good flavor without being rich
Ingredients
1/4 cup extra virgin olive oil
1-1/2 teaspoons crushed red pepper flakes
½ teaspoon fine grain sea salt
3 medium cloves of garlic, finely chopped
1/3 cup fresh chopped parsley (slightly packed)
1 tablespoon sugar
1 can 28-ounce PLAIN crushed red tomatoes (no spices or herbs, organic is even better if you can find it.)
zest of one lemon
Instructions
Combine the olive oil, red pepper flakes, sea salt, parsley and garlic in a cold saucepan. Stir while you heat the saucepan over medium-high heat, saute one minute or so until everything is fragrant - without browning the garlic. Stir in the tomatoes mixed with sugar and heat everything to a gentle simmer, about 5 minutes. Remove from heat and carefully take a taste...VERY HOT. If the sauce needs more salt add it now. Stir in the lemon zest. Let set a few minutes before serving
Makes about a quart of delicious tomato sauce, leftover sauce can be refrigerated up to 3 days then re-warmed.
Serve plain over noodles or rice mixed with scrambled eggs or noodles mixed with cooked beef stew meat. Works nice as a pizza sauce
Sprinkle with fresh grated Parmesan cheese
